Big Sky Cheese, LLC is part of Madison Food Park located in Cascade County, Montana. Cascade, meaning ‘waterfall’ in French, is considered one of the most beautiful parts of the world to live and visit.

Residents here are proud and take on a certain Western lifestyle that includes hunting, fishing and the great outdoors.

Creating an Artisan Cheese with higher quality requires more care put into making the cheese. Using only fresh Montana-raised dairy milk, natural and organic ingredients will inevitably ensure that Big Sky Cheeses will come out on top with quality, taste and texture.

Our approach has won many awards on the world stage and it can be replicated in Montana.

Antibiotics and hormone free

Big Sky Cheese manufactures Round Clothbound Cheddar Cheese, Gouda Cheese, Feta Cheese and Curds. The difference is in the way the cheese is processed using only simple wholesome ingredients such as whole milk rich with butterfat from Montana Dairy Producers, natural bacterial culture and microbial enzymes, organic annatto seed and sea salt.

We put the quality in before we put the cheese on the shelves.
We use only fresh milk from cows that have not been treated with antibiotics, hormones or animal by-products. The cows’ diets must be made up with Non-GMO grains such as corn and barley and forages such as alfalfa, corn or barley silage, legumes or grass. 

Artisan Cheese

Fresh and Natural Cheese

Big Sky Cheese will be manufacturing hard, fresh and aged Round Clothbound Cheddar Cheese and Gouda Cheese as well as a dairy-milk based Feta cheese. Essentially, these cheeses will be in the category of “Artisanal Cheeses” because of the old-fashioned production process and the natural & unadulterated ingredients being used.

Like back in the olden days, our Natural Cheese will have a simple list of ingredients. Including fresh Montana cow milk, natural bacterial culture & microbial enzyme, organic annatto colorant and sea salt. This process differs greatly from competitors’ typical cheese which contains filler ingredients such as modified milk Ingredients, skim milk, potato starch, corn starch and cellulose powder.

Whole milk produces a higher yield cheese with better flavor because of the butterfat it contains, whereas skim milk produces a drier cheese and lower yield.
