Cauliflower rice has quickly become a ketogenic staple, but let’s be honest—it can feel a little bland or boring all on it’s own! Luckily this keto-friendly coconut lime cauliflower rice recipe is packed with Caribbean-inspired flavor while still remaining low in carbs.

INGREDIENTS:

- 2 whole limes
- 2 tbsp. olive oil
- ¼ cup onion diced
- 2 tsp. minced garlic
- 4 c. riced cauliflower (preferably fresh, not frozen; available in produce section)
- ½ can unsweetened whole fat coconut milk
- 1 tsp. seasoned salt
- ¼ tsp. black pepper
- ¼ cup fresh cilantro chopped (optional)
STEP 1: Squeeze limes to release ¼ cup of fresh lime juice; set aside. Heat olive oil in a medium to large skillet over medium high-high heat. Add onions to pan; saute for 2-3 minutes until soft.
STEP 2: Add cauliflower rice and garlic; cook 1-2 minutes more.
STEP 3: Add coconut milk, along with salt and pepper. Cook for 5-7 minutes more, or until cauliflower is soft and coconut milk is absorbed.
STEP 4: Remove from heat; stir in lime juice and cilantro.
STEP 5: Serve with Coconut Lime Chicken
