Pizza can be a very personal thing, especially depending on where you were raised and what you prefer, but in all our taste tests, this easy keto-friendly cauliflower crust pizza was universally liked. It’s so good, in fact, most of our testers had a hard time believing it was low carb pizza!

- 2 eggs
- 2 pouches riced cauliflower rice (the shelf stable variety)
- 4 cups shredded mozzarella cheese
- 2 teaspoons Italian seasoning
- 1 jar pizza sauce (look for the lowest carb variety)
- Your favorite pizza toppings (pepperoni, sausage, bacon, mushroom, peppers, etc.; optional)
STEP 1: Preheat oven to 450 degrees; cover large baking sheet with parchment or use a nonstick silicone baking mat. In medium bowl, beat eggs with wire whisk.
STEP 2: Then add cauliflower rice, 2 cups shredded mozzarella cheese, and Italian seasoning to egg mixture and mix well.
STEP 3: Spread cauliflower mixture evenly over parchment paper or silicone baking mat and press down firmly to form crust.
STEP 4: Bake 15-18 minutes until firm and golden brown.
STEP 4: Remove crust from oven; spread with pizza sauce and other toppings as desired, then cover with remaining cheese.
STEP 5: Place back in oven and bake for 7-12 minutes, or until cheese is melted and bubbly.
STEP 6: Let cool for 5-10 minutes before slicing.
