INGREDIENTS:
- 1 large or 2 small cucumbers
- 2 ripe Roma tomatoes
- ¼ small red onion
- 6 large black or kalamata olives
- 4 tbsp. olive oil
- 3 tbsp. red wine vinegar
- 1 tsp. dried oregano
- ¼ tsp. salt
- ¼ tsp. black pepper
- 4 oz. feta cheese crumbles
STEP 1: Dice cucumbers, tomatoes and red onion and place into a medium bowl.

STEP 2: Whisk together the olive oil, vinegar, oregano, salt and pepper to make the dressing.
