I’m not gonna lie—I love a meatball. They’re my go-to when I have to bring a dish to share, because I always know they’ll get eaten! And they DO. Because it turns out, everyone loves a meatball!
These Mozzarella Stuffed Low-Carb Meatballs make a perfect low carb dinner, or a show-stopping appetizer to share. Trust me when I tell you that the small amount of effort involved is worth every minute!
INGREDIENTS:
- 1 pound ground Italian pork sausage
- 1 pound ground beef
- 1 tbsp. Italian seasoning
- 1 egg
- 1 tablespoon dried parsley
- ¼ cup pork rind crumbs (we prefer Pork Panko)
- ¼ cup grated Parmesan cheese
- ½ tsp. Salt
- ¼ tsp. Black pepper
- 12 ounces mozzarella cheese, cut into cubes
- 1 jar marinara sauce (look for lowest carb like 24 oz Ragu Simply)
STEP 1: Preheat oven to 400 degrees; line a large baking sheet with parchment paper or silicone baking mat. In large bowl, mix together pork, beef, Italian seasoning, egg, parsley, pork rind crumbs, Parmesan cheese, salt, and pepper until well blended.

STEP 3: Form meatballs by taking a large tablespoon of meat mixture and wrapping it around a mozzarella cube until it is fully enclosed, leaving no gaps. Place meatballs on baking sheet.
STEP 4: Bake for 15-20 minutes, until fully cooked through. A small amount of cheese may leak out—this is normal.
STEP 5: While meatballs are baking, heat sauce in medium saucepan over medium heat.
STEP 6: Serve meatballs with marina.
