There are a million different recipes for chili, and honestly it’s hard to go wrong with any combination of meat, tomato sauce, & chili powder. That said, not all chili can be considered low-carb chili, but thankfully this one hits the mark on ALL levels!

It’s the perfect recipe to feed a crowd, and we PROMISE it’s so delicious, they won’t even notice it’s low in carbs! It’s the perfect low-carb dinner option!

INGREDIENTS:

  • 1 pound ground beef
  • 1 pound ground Italian sausage (mild or hot, depending on what you like!)
  • ½ cup green bell pepper, diced
  • ½ large yellow onion, chopped
  • 1 tsp. minced garlic
  • 1 6oz can tomato paste
  • 1 14oz can petite diced tomatoes
  • 1 tbsp. chili powder
  • ½ tbsp. ground cumin
  • ⅓ cup water
  • Toppings: sour cream, shredded cheddar cheese, & diced green pepper

STEP 1: In large pot or saucepan over medium-high heat, brown ground beef & Italian sausage; spoon out & discard approximately half the fat then remove browned meat from pan and set aside.

STEP 2: Saute green pepper, onion, and garlic in remaining fat and cook until soft, about 2-3 minutes.

STEP 3: Add meat back to pan and stir in tomato paste, tomatoes, seasonings, and water, and mix well.

    Easy to throw together, with a nice mouth feel while eating. I made it in my Instant Pot on the chili setting. Hubby and I are spice lovers, so I’d definitely add more chili powder next time.
