Make The Slurry
A slurry is the secret to making any gravy or sauce thicker. Make your slurry from half a cup of chicken broth and a teaspoon of xanthan gum. You’ll set this aside and add it to the broth and remaining ingredients later.
If you try to add xanthan gum directly to the broth and ingredients, it could form lumps. Slurries prevent lumpy gravy.
Save The Turkey Drippings
The turkey drippings are what makes this taste perfect with the roast turkey. Save as much of the turkey drippings as you can. You need at least ¾ of a cup.
Add Spices To Taste
Taste the gravy after you add all the spices and ingredients. Adjust this recipe to make it just how you like it—if you want it bolder, add more garlic or onion powder.

Here’s what you’ll need from the store before you make the keto turkey gravy. Read through the list of ingredients below (we will also share any swaps/substitutions you can make).
- Chicken Broth: Either chicken or turkey broth will taste great with this gravy. You can use low sodium if you want. If you use low-sodium broth, add a touch more salt.
- Xanthan Gum: This is what thickens the broth without adding carbs.
- Turkey Drippings: Use drippings that are left over after the turkey roasts in the oven.
- Butter: Both salted and unsalted butter will work.
- Worcestershire Sauce: This adds more saltiness to the gravy.
- Onion Powder: To prevent the gravy from being too salty, don’t use onion salt—just onion powder.
- Garlic Powder: Use garlic powder, not garlic salt, to make sure the gravy doesn’t taste too salty.
- Salt and Pepper: Taste the gravy before you add salt. It might not need much.
How To Make Keto Turkey Gravy
All the exact steps are in the printable recipe card at the bottom of this post. First, we have some photos of each step in this recipe so you can see how we made it (this is for you, visual learners). Here’s what the recipe looks like when you make it.
Step 1: Make the Slurry. Whisk together some of the chicken or turkey broth with the xanthan gum and set it aside.
Step 2: Simmer Gravy with Slurry. Use a medium saucepan to whisk together the rest of the broth, turkey drippings and butter. Add the slurry and let it simmer.
Step 3: Season the Gravy. After it’s thickened, remove the gravy from the heat and mix in the rest of the seasonings and spices. Taste it, adjust the spices and then serve it.
Storing Leftovers
You can make keto turkey gravy about three days in advance. Store it in an airtight food storage container in the refrigerator and then reheat it on the stove.

Ingredients
- 2 c. Turkey Broth or chicken broth, divided
- 1 tsp. Xanthan Gum
- ¾ c. Turkey Drippings
- 2 tbsp. Butter
- 1 tsp. Worcestershire Sauce
- ½ tsp. Onion Powder
- ½ tsp. Garlic Powder
- ½ tsp. Salt
- ½ tsp. Black Pepper
Instructions
- In small bowl, whisk together a half cup of the chicken broth with xanthan gum to make a slurry; set aside.
- In medium saucepan over medium heat, whisk together remaining broth with turkey drippings and butter until butter is melted and mixture is simmering. Whisk in reserved slurry, then simmer for approximately five minutes, until mixture is thickened.
- Remove from heat. Whisk in Worcestershire sauce, onion powder, garlic powder, salt and pepper. Add additional seasonings to taste, if desired.
